Quick and Easy Recipes for Sausage and Peppers

Whether eaten on a bun or by itself, sausage with peppers is a delicious meal to make for you and your family.  My first encounter with this tasty sandwich was at a county fair when I was a youngster.  It basically consisted of spicy Italian sausage, onions, green pepper and a tomato based sauce.  Since then I have tried many different variations of this comfort food favorite.  You can experiment with different sauces, peppers, onions and sausage to create your own masterpiece.  Here are a couple quick and easy sausage and peppers recipes for you to try, just in time for Football Sunday!

 

 

Sausage and Peppers

 

 

What you need:

 

1.5-2 lbs Italian sausage links
2 large onions, sliced
1 large red or yellow bell pepper, cut in strips
1 large green bell pepper, cut in strips
3/4 t salt
1/2 t oregano leaves
2 T olive oil

 

What you do:

 

Pour about 1/3 c water into a large skillet.  Add sausage to skillet and cook over med heat until water simmers.  Cover skillet and simmer for 5-7 minutes.  Remove cover and continue cooking, turning often, for about 20 minutes or until sausage is nicely browned.  Set aside sausage and add olive oil to skillet.  Heat oil and add all remaining ingredients to pan.  Cook over med heat until vegetables are browned and tender, stirring often.  Add sausage to skillet, cover and cook on low until heated through.
Sausage and peppers are great by themselves or with a side of rice.  They are also delicious on a brat bun or crusty roll with your favorite condiments.

 

 

Low Fat Sausage and Peppers

 

 

What you need:

 

14 -16 oz package smoked turkey sausage
1 medium onion, sliced
1 large green pepper, cut in strips
1 large red pepper, cut in strips
14.5 oz can crushed tomatoes
4 oz can sliced mushrooms, drained
2 T olive oil
1 t oregano
1 t basil
1/2 t red pepper flakes
1/4 t garlic salt
1/8 t black pepper

 

What you do:

 

Heat 1 T olive oil in a large skillet over med-high heat.  Add onion, peppers, mushrooms, oregano, basil, red pepper flakes, salt and pepper to skillet and cook until vegetables are softened but still crisp, stirring frequently.  Remove vegetables from pan.  Heat 1 T oil in skillet.  Cut sausage in half lengthwise, then slice in 1/2 inch pieces.  Add sausage to skillet and cook at med-high heat until lightly browned.  Add vegetables and crushed tomatoes to skillet and mix.  Cook over medium-heat, stirring occasionally, until heated through; serve. 
If you’re not worried about the fat content, you may use polish sausage or smoked sausage.

Quick And Easy Recipes For Scallops

You don’t need a bunch of ingredients or a lot of time to make a
delicious meal with scallops.  A little bit of love and a minimal bit of skill
will bring out the sweet taste of the scallop to your palate.  Here are
three quick and easy to make recipes for scallops that I hope you will
enjoy.

Pan Fried Scallops

What you need:

1 lb fresh sea scallops (medium sized)
1/3 cup bread crumbs
3 T butter
1/8 teaspoon pepper
1/8 teaspoon salt
dash of paprika (1/16 t)
1 lemon

 

What you do:

In medium bowl, combine salt, pepper, paprika and bread
crumbs; add scallops and roll until coated.  Heat butter in large
skillet over medium-high heat.  Add scallops and fry until golden-
brown, approximately 6 to 8 minutes, turning occasionally.  
Serve with lemon wedges.

 

Scallops Italiano

What you need:

1 lb large sea scallops
2 T olive oil
1/4 t pepper
1/8 t salt
1 clove garlic, minced
11/2 t fresh basil leaves, chopped
2 T fresh parsley, chopped
11/2 c tomatoes, diced
1 T lemon juice

 

What you do:

In a medium bowl, combine tomatoes, parsley, basil, garlic,
lemon juice, salt and pepper.  Heat oil in a large skillet, add
scallops and cook over medium-high heat for 2 minutes on each
side.  Add the other ingredients from bowl and cook until heated
through (no more than 2 minutes) while stirring.

 

Quick and Easy Scallops

What you need:

1 lb bay scallops
2 T olive oil
lemon pepper

 

What you do:

Season scallops with lemon pepper per taste.  In a medium
skillet, heat oil on high heat.  Add scallops to skillet and cook for
5 minutes, turning scallops over halfway through cooking.  
Serve with lemon wedges or melted butter.

Quick and Easy Recipes for Busy Days; Lamb Chops, Dinner Rolls and Waldorf Salad

Even on busy days it is possible to serve a real meal to your family.  It is so important to cook healthy meals for your family instead of bringing home fast food several times a week.  Here are three recipes to help you out; Lemony Lamb Chops for the entree, Quick and Easy Waldorf Salad, and Quick and Easy Dinner Rolls.  These recipes are also diabetic friendly

QUICK AND EASY DINNER ROLLS AND THEY ARE DIABETIC FRIENDLY, TOO

2 cups self-rising flour
1/4 cup + 2 tbsp mayonnaise
1 cup lowfat buttermilk
nonstick cooking spray

Preheat oven to 375 degrees.

In a mixing bowl combine the flour, mayonnaise, and buttermilk. Stir ingredients together just until moistened.

Spray 12 muffin cups with the nonstick cooking oil spray. Spoon the batter evenly into the muffin cups and bake at 375 degrees for 12 to 15 minutes or until lightly browned.

LEMONY LAMB CHOPS

2 tsp lemon pepper seasoning
2 1/2 tsp ground cumin
4 shoulder lamb chops, 3/4-inch thick
2 tsp canola oil
1 lemon, cut into wedges

In a small bowl mix the lemon pepper seasoning with 2 teaspoons of the ground cumin; rub onto both sides of the chops. Heat the canola oil in a nonstick skillet set over medium-high heat. Cook the chops 3 to 5 minutes per side depending on your desired doneness. Serve with lemon wedges.

QUICK AND EASY WALDORF SALAD

3 cups chopped red and/or green apples
1/2 cup mayonnaise or mayo style salad dressing
1/2 cup coarsely chopped walnuts
1/2 cup golden raisins
1/2 cup frozen whipped topping, thawed*

In a large mixing bowl, combine the apples, mayonnaise, walnuts, and raisins. Stir together to blend well. Fold in the whipped topping. Chill until serving time.

*Use Sugar-free topping and you have a diabetic-friendly salad

Quick and Easy Recipes for Party Foods and Appetizers

Even the shiest of individuals can be drawn into the group by good food.  Get your party off to a great start by serving a good selection of appetizers and beverages while your friends get acquainted.  Here are three quick and easy recipes for some tasty party foods.  Artichoke Pepper Spread is a delicious spread that is served warm with assorted party breads or crackers.  The Quick and Easy Cracker Appetizers offer two different types of crackers for two different types of taste.  Yet they are about as quick and easy as you can get!  The Spinach Parmesan Dip is great with crackers or fresh veggies.  To get more veggies into the mix, I would suggest serving this dip with a tray of fresh vegetables.

ARTICHOKE PEPPER SPREAD
 
1 can (14-oz) artichoke hearts, drained
1 jar (6-oz) marinated artichoke hearts, drained
1 cup shredded cheddar cheese
1 can (4-oz) diced green chili peppers, drained

Place all the drained artichoke hearts in a blender container or food processor. Cover and process until finely chopped. Stop machine and scrape down sides of bowl when necessary. Transfer artichokes to a medium saucepan; stir in the cheese and chili peppers. Cook, stirring, over medium-low heat for about 15 minutes or until heated through and the cheese has melted. Serve warm with party breads and/or assorted crackers.

QUICK AND EASY CRACKER APPETIZERS
 
Graham crackers
Whole-Grain crackers
1 tub cream cheese
orange marmalade
jalapeno jelly

Spread the crackers with the soft-style cream cheese. Top the cream cheese on the Graham crackers with the orange marmalade. Top the whole-grain cream cheese crackers with the jalapeno jelly. With this one quick and easy recipe, you have appetizers for two very different tastes to serve your guests. 

EASY SPINACH-PARMESAN DIP

1 pkg (10-oz) frozen chopped spinach, thawed and well drained
1 cup mayonnaise style salad dressing
1 cup sour cream
1/2 cup grated Parmesan cheese
1 can (8-oz) water chestnuts, drained & chopped
1/8 tsp ground red pepper

In a medium bowl, blend the salad dressing and sour cream together. Stir in the Parmesan cheese and red pepper. Add the spinach and water chestnuts, stir to blend well. Cover and chill. Serve with assorted crackers and/or fresh vegetables.

Yield: 4 cups

Finding Quick And Easy Recipes

Have you done a search for a quick and easy dinner recipe lately? I ask because I noticed something interesting the other day when I did a Google search for a quick and easy recipe for dinner this past weekend.The thing about that search that struck me as funny was the fact that all I had to search for was quick and easy, I did not have to mention what was quick and easy that I was looking for. No mention of dinner, appetizers, meals or another one hundred ways to cook a chicken nothing no mention of food or cooking what so ever.

I suppose it struck me as funny because I could think of quite a few things that I would look for that were quick and easy and none of them involve food. Yet when I tried to search just on quick and easy for all three major search engines they all assumed that I was looking for quick and easy recipes. Yes it’s true that quick and easy recipes is exactly what I was looking for and for the most part they all gave basically the same food sites to find quick and easy recipes.

Just got me thinking how often people around the world must be looking for quick and easy recipes that all I have to type now is quick and easy. I did find a delicious recipe for a chicken and pasta dinner with diced red peppers and yes it was quick and easy! This also got me to thinking about how the concept of spending a decent amount of time to cook a good meal with more than five ingredients has become a lost art form really. Some of the most popular cooking shows on the Food Network for example are all about limiting your ingredients and preparing your meals in thirty minutes or less.

I reflect on the cooking habits that go on in our house and I would have to say that the only time we spend more than a half hour on any meal usually means we are cooking a holiday feast. Other wise I suppose we are like everyone else looking for short cuts to making our meals. This led me to another thought about all these quick and easy meals that perhaps all this short cut cooking that we all do and cutting back on ingredients is part of the reason so many people are fighting obesity and poor health. Not to say that quick and easy recipes are not healthy but that maybe they are missing some of the key ingredients and nutrients that we used to get in our daily nutrition but are now being shorted in the interest of saving time and money.

Quick and Easy Recipe for making Cookies with Gelatin Mix

Everyone loves homemade cookies but some of us think we don’t have the time to make them.  Wrong!  It doesn’t have to take all day or evening to whip out a delicious batch of homemade goodies.  For parents or grandparents of young children, I believe it is especially important to have them in the kitchen once in awhile to help you bake.  Here is a good simple recipe for those who think they don’t have the time!  These Gelatin Cookies are good ones to make with children.  They love pressing the dough balls down with a sugared glass.

GELATIN COOKIES
 
3/4 cup shortening
1/2 cup sugar
2 eggs
1 tsp vanilla
1 tsp baking powder
2 1/2 cups sifted all-purpose flour
1 tsp salt
1 pkg (3-oz) fruit flavored gelatin (your choice)

Preheat oven to 400 degrees.

In a large mixing bowl,cream the shortening and sugar together until smooth. Add the dry gelatin mix, eggs, and vanilla; mix well. In a separate bowl mix the baking powder, flour, and salt together. Add the flour mixture to the sugar mixture and mix together well. Roll the dough into 3/4-inch balls. Press onto a greased cookie sheet with a small glass, the bottom dipped in sugar. (Rub a small amount of shortening on the bottom of the glass to get sugar to stick the first time. Bake at 400 degrees for 10 to 12 minutes until lightly browned.

Note: You can add a couple of drops of food coloring to enhance the color of the gelatin, if desired.
